Hot out of the oven. Cheese bubbling. Fresh tasting tomato sauce, creamy mozzarella, the aroma of basil and the tenderness of the crust. I've never tasted anything like it! I must learn more. These were the thoughts racing through my mind as I tasted my first Neapolitan pizza baked in a beautiful wood-fired oven.
My new found obsession led me to build the 900 degree oven seen in the picture above. I spent the next two years practicing my craft and after a lot of trial and error I decided to open my own pizzeria.
Basal has worked hard to test, retest and perfect the dough we serve. Our pizzas are baked in an authentic Neapolitan oven built in Italy. We offer unique topping combinations, top quality cheese, and a crust that develops flavor forforty eight hours before it's baked.
What is Neapolitan pizza?
Originating in Naples, Italy, Pizza Napoletana is baked for 60-90 seconds in a 900 degree wood-fired oven. It's lightly topped with emphasis on quality over quantity. Neapolitan pizza has a tender texture, char (little heat blisters on the crust that add a hint of smokiness), fresh mozzarella, crushed plum tomatoes, fresh herbs and premium olive oil.
